I have never met someone who doesn’t like scrolling through Pinterest for hours while avoiding necessary activities. One night, while enjoying the endless scroll feature, I stumbled upon rainbow cakes, and my soul immediately lightened. I love rainbows, and I love food it was a match made in heaven. So, On a Saturday when I was definitely supposed to be cleaning, I decided to put my life on hold and made some gorgeous twisted rainbow cakes. I decided to take it one step further and add some booze to the recipe. The end result was a beautiful combination of visual, edible magic.

Ingredients and supplies
  • 1 box white cake mix
  • 4 egg whites
  • 1 cup water
  • 1/4 cup cake-flavored vodka
  • 1/2 cup vegetable oil
  • Food coloring
  • 8 ounce mason jars
  • Cooking spray

Preheat oven to 350º. Mix the cake mix, egg whites, water, vodka and oil in a large bowl for two minutes. Separate the cake mix into smaller bowls. Add food coloring to each small bowl. Spray inside of mason jars with cooking spray. Layer one heaping teaspoon of each color cake batter into a mason jar until half full. Place mason jars in a water bath and bake for 30 minutes. After baking, remove from oven and let cool completely. If desired, decorate cakes. Enjoy!
