Ingredients:
4 pork chops, fat trimmed
1 tablespoon olive oil
5 cloves of garlic, grated
1 ½ cups of fresh tomatoes, diced
1 large onion, diced
2 teaspoons oregano
1 teaspoon sage
1 teaspoon basil
Steps:
- Heat a large skillet on high until warm. Add oil until it just begins to sizzle and lightly smoke.
- Carefully add the pork chops and brown for about 1 minute on each side, being mindful of hot oil popping from the pan.
- Reduce heat to medium-low and add onions. Stir onions and flip the pork chops after 2 minutes on each side.
- Grate garlic over the pan. Add tomatoes and spices and stir.
- Simmer about five to eight minutes until tomatoes are soft and the sauce has thickened.
- Serve pork chop topped with vegetables and sauce. Serves four.
