Plain & Simple: Tuscan Pork Chops

Ingredients:

4 pork chops, fat trimmed

1 tablespoon olive oil

5 cloves of garlic, grated

1 ½ cups of fresh tomatoes, diced

1 large onion, diced

2 teaspoons oregano

1 teaspoon sage

1 teaspoon basil

Steps:

  1. Heat a large skillet on high until warm. Add oil until it just begins to sizzle and lightly smoke.
  2. Carefully add the pork chops and brown for about 1 minute on each side, being mindful of hot oil popping from the pan.
  3. Reduce heat to medium-low and add onions. Stir onions and flip the pork chops after 2 minutes on each side.
  4. Grate garlic over the pan. Add tomatoes and spices and stir.
  5. Simmer about five to eight minutes until tomatoes are soft and the sauce has thickened.
  6. Serve pork chop topped with vegetables and sauce. Serves four.
