Boozy Brownies
Adapted from Blondie’s Cakes & Things
Ingredients:
1 cup flour
3/4 cup cocoa powder
1/4 teaspoon salt
6 tablespoons butter
1 cup bittersweet chocolate chips
3/4 cup white chocolate chips
4 large eggs
1 cup sugar
2 bottles Guinness beer
3/4 teaspoon vanilla
1 cup mini semi-sweet chocolate chips
Steps
- Preheat oven to 350 degrees and line a 9×13 cake pan with foil. Spray with nonstick cooking spray.
- Pour both bottles of beer into a medium saucepan and boil until reduced to 1 ½ cups. Set aside to cool.
- Use a double boiler, or a glass bowl resting over a pot of boiling water, to melt butter, bittersweet chocolate chips and white chocolate chips over low heat. Set aside to cool.
- In a separate bowl, combine eggs and sugar. Use a mixer on low to beat eggs and sugar until light and fluffy.
- Add flour and cocoa to the egg/sugar mixture. Then add salt and vanilla. Continue to mix.
- Slowly add melted chocolate to the mixer.
- Slowly mix in the reduced beer until smooth.
- Pour batter into the prepared pan and top with mini semi-sweet chocolate chips.
- Bake 20-25 minutes. Cool and cut into squares. The finished brownies will have the consistency of fudge. Makes 16-20 brownies.
