Plain & Simple: Boozy Brownies

Boozy Brownies

Adapted from Blondie’s Cakes & Things

Ingredients:

1 cup flour

3/4 cup cocoa powder

1/4 teaspoon salt

6 tablespoons butter

1 cup bittersweet chocolate chips

3/4 cup white chocolate chips

4 large eggs

1 cup sugar

2 bottles Guinness beer

3/4 teaspoon vanilla

1 cup mini semi-sweet chocolate chips

Steps

  1. Preheat oven to 350 degrees and line a 9×13 cake pan with foil. Spray with nonstick cooking spray.
  2. Pour both bottles of beer into a medium saucepan and boil until reduced to 1 ½ cups. Set aside to cool.
  3. Use a double boiler, or a glass bowl resting over a pot of boiling water, to melt butter, bittersweet chocolate chips and white chocolate chips over low heat. Set aside to cool.
  4. In a separate bowl, combine eggs and sugar. Use a mixer on low to beat eggs and sugar until light and fluffy.
  5. Add flour and cocoa to the egg/sugar mixture. Then add salt and vanilla. Continue to mix.
  6. Slowly add melted chocolate to the mixer.
  7. Slowly mix in the reduced beer until smooth.
  8. Pour batter into the prepared pan and top with mini semi-sweet chocolate chips.
  9. Bake 20-25 minutes. Cool and cut into squares. The finished brownies will have the consistency of fudge. Makes 16-20 brownies.
