Serves 6
Ingredients:
2 medium zucchini, diced
1 ½ pounds extra-lean ground beef
2 cloves of garlic, minced
1 can (10 ounces) tomatoes and green chilies
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon onion powder
¼ teaspoon crushed red pepper flakes
Steps:
- In a large skillet over medium heat, brown extra-lean ground beef with garlic, salt and pepper.
- Add tomatoes and green chilies and remaining spices. Simmer over low heat for 10 minutes.
- Mix in zucchini and cover. Cook for another 10 minutes until zucchini is cooked, but still firm.
- To serve, spoon into a bowl and enjoy.
