Plain & Simple: Lemon Chicken

Adapted from Pinch Of Yum: Serves 4

Ingredients:

2 large boneless, skinless chicken breasts

¼ cup flour

4 tablespoons butter

1 teaspoon lemon pepper seasoning

2 cups chopped asparagus

2 lemons, sliced

2 tablespoons honey

Steps:

  1. Cut chicken breasts in half horizontally through the center.
  2. Coat both sides of the chicken in the flour.
  3. Brown chicken in two tablespoons of butter over medium-high heat until golden brown on each side. Sprinkle lemon pepper seasoning on both sides of chicken while cooking.
  4. When chicken is cooked thoroughly, remove from pan and set aside.
  5. In the same pan, add chopped asparagus and cook until tender. Remove from pan and set aside.
  6. Add remaining butter to pan.
  7. Place lemon slices in a single layer across the bottom of the pan. Drizzle with honey.
  8. Cook until lemons caramelize. Turn lemons over and drizzle with more honey. Cook the other side evenly.
  9. Assemble plate by placing the chicken over asparagus and then top with the caramelized lemons.
