Adapted from Pinch Of Yum: Serves 4
Ingredients:
2 large boneless, skinless chicken breasts
¼ cup flour
4 tablespoons butter
1 teaspoon lemon pepper seasoning
2 cups chopped asparagus
2 lemons, sliced
2 tablespoons honey
Steps:
- Cut chicken breasts in half horizontally through the center.
- Coat both sides of the chicken in the flour.
- Brown chicken in two tablespoons of butter over medium-high heat until golden brown on each side. Sprinkle lemon pepper seasoning on both sides of chicken while cooking.
- When chicken is cooked thoroughly, remove from pan and set aside.
- In the same pan, add chopped asparagus and cook until tender. Remove from pan and set aside.
- Add remaining butter to pan.
- Place lemon slices in a single layer across the bottom of the pan. Drizzle with honey.
- Cook until lemons caramelize. Turn lemons over and drizzle with more honey. Cook the other side evenly.
- Assemble plate by placing the chicken over asparagus and then top with the caramelized lemons.
