For most Midwesterners, Summer can be boiled down to a buttered slab of corn on the cob, but there’s so much more you can do with a tasty pile of kernels. With Thanksgiving coming, and Harvest in the bag, it’s time for us to turn to a couple of recipes that will get you through winter. That’s right, Urban Plains producers are tackling corn-related food. We will break down two simple recipes in all of their corniness: corn salsa and corn cupcakes. Corn Salsa
Vanilla “Corn” Cupcakes
Corn Salsa Recipe
- 1 Can of corn
- 1 Bag of tortilla chips
- 1 Container of fresh pico de gallo
Vanilla “Corn” Cupcakes Recipe
- 1 Box of vanilla cake mix (any kind)
- 3 Eggs
- 1 Cup of water
- ½ Cup vegetable oil
- Bake for 15-17 minutes at 350 degrees
Vanilla “Corn” Cupcakes Frosting
- 1 Container of vanilla frosting
- 1 Bag of gold chocolate balls
- Yellow food coloring
